Cooking: Chicken Enchiladas

I know I’ve been doing a lot of food posts recently! I’m going to try to do something different this week but I was so excited about making this dinner that I couldn’t wait to post it. My mom is a great cook and growing up there were a couple of meals that we always loved and looked forward to. One of those was chicken enchiladas. They are creamy, cheesy, warm…just amazing. I’ve been starting to work my way through my favorite recipes and I decided to try to make the chicken enchiladas the other night. They were just like I remembered, so I’d call that a success.

Cooking: Sugar Cookies

Homemade sugar cookies are one of my favorite holiday treats. I used my great grandmother’s recipe to make a set of pumpkins and bats for Halloween. I took some into my office un-iced and everyone still really enjoyed them. I can’t wait to make them again at Christmas!

Cooking: 7 Layer Mexican Dip

7 layer Mexican dip is one of my go-to appetizers for impromptu gatherings. It only takes about 15 minutes to make and it’s always a crowd pleaser. You just layer the following in a 9 by 13 pan: Frito’s bean dip, guacamole, soup cream, ground beef (prepare in advance with taco seasoning), salsa, cheese, tomatoes, green onions and black olives. Serve with your favorite tortilla chips!

Happy October

I have been away from my blog far longer than I intended! It seems like since we moved my days and nights have been packed with fun things like trivia with new friends, a trip to the Atlanta Botanical Gardens to see the scarecrows made by locals, attending the Southern Ladies convention this weekend and Lauren‘s wedding in St. Louis next weekend. It has been filled with family, friends and great experiences. I love the fall!

Cooking: White Chocolate Macadamia Nut Cookies

I am usually not a fan of white chocolate but when I lost a bet at work and had to make white chocolate chip macadamia nut cookies, I fell in love with this recipe from Ghirardelli. They are sweet but not too sweet and every time my co-workers have eaten every one. I only make a half a batch and it still makes three dozen. They are definitely one of my go to recipes now.
